Sweet Conversions – Try my favorite natural sweetener substitutes for cane sugar in cooking and baking:
Instead of 1 cup of sugar, use…
2/3 cup honey
2/3 cup agave nectar
1 cup maple syrup
3/4 cup coconut palm sugar
2 cups date sugar
1 cup fruit juice concentrate
2 1/2 cups rice syrup
1 teaspoon Stevia powdered extract or liquid concentrate
2/3 cup molasses (note: also from sugar cane)
For more information about natural sweeteners, including a glossary of terms, check out the original article by Annie B. Bond. Details about coconut palm sugar can be found at Simply Sugar and Gluten Free. Stevia is a newer alternative to sugar that is gaining in popularity. Additional details can be found here.
