Mustard: if you need a new sandwich condiment, think about flavored olive oil, salad dressing, mayonnaise or homemade ketchup.
Onions: onions are great in giving your meal some acidity and sweetness. A good alternative is lime juice since it has similar acid and sweet flavors. Onion is a common flavoring in stocks, soups and ketchup; consider making your own versions flavored with garlic and other seasonings.
